Rice pudding (Mexican style)

 

Ingredients

Serves 4-6

  • 100g of pudding rice
  • 750ml of whole milk
  • 50g of golden sugar
  • {piq}1 small Mexican cinnamon stick
  • 50g Raisins (soaked in tequila for at least 3 hours)
  • 50g grated dark chocolate (at least 70% cocoa!)

 

Information

Rice pudding is found in many cuisines from around the world. Variations to this warming and indulgent pudding tend to be around the flavourings added and our Mexican style rice pudding recipe relies on mellow Mexican cinnamon, tequila soaked raisins and grated dark chocolate to finish.

2 hours

Instructions

  • Pre-heat oven to 150°C
  • Wash the rice well and drain
  • Grease a large oven proof dish and then add the rice, sugar and milk and stir.
  • Add the cinnamon stick and tequila soaked raisins
  • Place the dish in the oven and cook for 1 hour
  • Remove the cinnamon stick, stir through and place the dish back in the oven for 45 minutes to 1 hour
  • Serve immediately with grated dark chocolate sprinkled on the top
