Grilled Tiger Prawn with Mint Dressing

(Pla Goong Lai)

Ingredients

Makes 4 servings

  • 8 pieces raw tiger prawns
  • 8 tsp sliced lemongrass
  • 8 tsp sliced kaffir lime leaves
  • 8 tsp sliced shallots
  • 8 tsp sliced Thai Long chillies (pre soak in hot water for 30 mins)
  • Mint leaves
  • 6 tsp sugar
  • 12 tsp fish sauce
  • 8 tsp of freshly squeezed lime juice

Information

Thai cuisine is rich in seafood and particularly so on Phuket from where this recipe originates. Tiger prawns combined with our Thai Long chillies and the fresh flavours of lemongrass, lime and mint combine to make this light starter dish a fantastic beginning to a wonderful evening.

15 minutes

Instructions

  • Pan fry the tiger prawns until cooked
  • Place 2 cooked tiger prawns per plate
  • For the dressing, combine the fish sauce, sugar, and lime juice and add slices of lemongrass, kaffir lime leaves, shallots, hot chilli and mint leaves and mix them well
  • Place the dressing on top of the tiger prawns and serve immediately
