Stir-fried Prawn Curry (Goong Phad Klung Gaeng)

Ingredients

Makes 4 - 6 servings

  • 700g prawns, peeled
  • 2 tsp Thai curry paste
  • 8 tsp oyster sauce
  • 4 tsp kaffir lime leaves
  • 4 tbsp green pepper corns
  • 8 tsp vegetable oil
  • 8 tsp chicken stock
  • 4 tbsp basil leaf
  • 8 tbsp string beans
  • 4 tsp sugar
  • 6 tbsp Thai Long chillies (pre-soak in hot water for 30 minutes)
  • 4 tbsp coconut milk
  • 8 tsp fish sauce

Information

Stir fries are a common feature of Thai cooking and are quick and easy to prepare making them ideal for when you're pushed for time. We have a separate recipe for the curry paste needed to make this fantastic dish so be sure to review it before you go out to buy your ingredients. You may find it easier to buy a pre-made curry paste from the supermarket. Add as much or as little of our Thai Long chillies depending on how hot you want your curry to be.

Instructions

  • Preheat oil in pan or in skillet and add curry paste
  • Add prawns and cook
  • Add string beans, cook until soft
  • Add oyster sauce, fish sauce sugar, chicken stock and some of the coconut milk
  • Before serving add basil leaf, red chillies, kaffir lime leaf and green pepper corns
  • Add a few drops of coconut milk
  • Serve with rice
