Tender Bamboo Shoots with Chilli (Ekung)

Makes 5 servings

  • 500g bamboo shoot
  • 1 ½ tsp salt

Information

This tangy and spicy side dish is popular in Arunachal Pradesh (North East India) (Means land of the dawn lit mountains) especially during the bamboo shoot season. This is served as an accompanying side dish that is a must during every meal time both lunch or dinner.

 

 

Instructions

  • Wash bamboo shoots and drain thoroughly.
  • Combine chilli flakes with a little water, salt and mix with bamboo shoots.
  • Place mixture in a pan over moderate heat and stir and cook for about 10 minutes. The aroma from the dish as it is cooking will be pungent so make sure the kitchen is well ventilated.
  • The dish should be a little moist.
