Pozole

 

Ingredients

Makes 4-6 servings

  • 800g - 1kg of drained sweetcorn
  • 1 large white onion
  • 1 clove of garlic pressed
  • 600g of shredded turkey, pork or chicken
  • 3 litres of chicken stock
  • 60ml of corn oil (or vegetable oil)
  • salt and pepper to taste
  • Sliced radishes for garnish

Serve with tortillas

 

 


Information

Pozole is another traditional dish of Mexico and is eaten a lot around the Christmas period. In Mexico they use a special type of corn that isn't widely available in England so we have had to adapt this recipe to use normal sweetcorn instead. If you want your Pozole to be a little bit spicier simply add more of the Guajillo chilli based red chilli sauce.

Instructions

  • Add oil to a frying pan and fry onions, garlic and oregano until onions are soft
  • Place into large sauce pan or stock pot with the rest of the ingredients and simmer for 1 hour
  • Serve with warm tortillas
