Words cannot describe how truly delicious Flautas are! They are assembled in a similar manner to Enchiladas though less filling is added and they are wrapped more tightly before being deep fried in corn oil to give a wonderful crisp finish! Depending on what sauce you are using they can incorporate Chipotle chillies, Guajillo chillies or Ancho Poblano chillies - see ingredients for links to the sauces.

Instructions
Take the shredded meat, onion and red pepper and mix in a large bowl. Add enough of your chosen sauce to bind the filling together.
one at a time place a portion of the mixture in a line down the centre of each of the tortillas and then roll tightly taking care to not tear the tortilla. Then secure shut with cocktail sticks
When you have finished filling and securing each of the tortilla place oil in a deep sauce pan and bring up to frying temperature.
Gently fry each of the Flautas until they are golden brown and wrap in kitchen towel to drain excess oil
