Carnitas

 

Ingredients

Serves 8

  • 1.5kg pork shoulder
  • 1 white onion
  • 500ml orange juice
  • 250ml water
  • 4-6 cloves garlic crushed
  • 2 tsp of Mexican Oregano
  • 2 bay leaves
  • lard of vegetable oil
  • 1 tsp salt

 


 

Information

Carnitas means "little meats" and is shredded slow cooked pork shoulder, finished off in the oven to crisp up giving you a mouthwatering combination of soft, tender and crunchy textures. Enjoy Carnitas with Mexican rice or use to fill tacos, enchiladas or burritos.

Time

2½ hours

Instructions

  • Heat oil in a large saucepan over a medium heat and brown pork shoulder, cut into sections if required.
  • Then add all of the other ingredients to the pan and simmer for around 2 hours until the liquid has evaporated
  • Pre-heat oven to 200°C
  • Shred the meat into smaller pieces and place a roasting dish
  • Place roasting dish in the oven and roast uncovered for 20 minutes or until the meat has crisped up
  • Serve with Mexican rice, or use to fill tacos, enchiladas or burritos
