Carnitas means "little meats" and is shredded slow cooked pork shoulder, finished off in the oven to crisp up giving you a mouthwatering combination of soft, tender and crunchy textures. Enjoy Carnitas with Mexican rice or use to fill tacos, enchiladas or burritos.

Instructions
Heat oil in a large saucepan over a medium heat and brown pork shoulder, cut into sections if required.
Then add all of the other ingredients to the pan and simmer for around 2 hours until the liquid has evaporated
Pre-heat oven to 200°C
Shred the meat into smaller pieces and place a roasting dish
Place roasting dish in the oven and roast uncovered for 20 minutes or until the meat has crisped up
Serve with Mexican rice, or use to fill tacos, enchiladas or burritos
