Manju Malhi is a TV chef and cookbook author who encourages people to spice up their lives with a bit of chilli, cumin, coriander, turmeric and garam masala whenever they can. These are her five favourite spices. She teaches novice cooks not only in the UK but in India how to prepare delicious dishes in a most accessible and easy way. She is well known for promoting British cuisine in India and Indian food to the western market through simple recipes and effective ideas encouraging consumers to experiment with new flavours and products.

Hoihnu is a successful journalist, writer, poet and author of the Essential North-East Cookbook which she compiled to celebrate the much overlooked cuisine of North-East India. Hoihnu is based in New Delhi but is originally from Manipur and so is steeped in the culinary traditions of the region.

Born and raised in Mexico Zarela has been a professional Chef since the late 1970s and is famed throughout the United States for her commitment to authentic Mexican food. She is the owner of the popular restaurant in New York carrying her name and has also penned a number of cookbooks to share her vast knowledge of traditional Mexican food. She has kindly allows us to publish a couple of her recipes here from her book "Food from my Heart"
