Brazilian Aubergine and Chickpea Stew

Holy Smokes! Aubergine just got way more exciting! Using my recipe for Aubergine Stew you can create a delicious dish bursting with Brazilian flavours!

Capsicana Brazilian Chilli & Coconut Sauce
  • 1 tbsp Olive Oil
  • 1 Onion
  • 3 Garlic Cloves
  • 1 Aubergine
  • 1 can Chopped Tomatoes
  • 1/2 tsp sugar
  • 120ml of water

  1. Heat the oil in a large frying pan on medium heat. Add the onions and cook for a couple of minutes, then add the garlic and cook for another minute, until fragrant.
  2. Continue by adding the aubergine to the pan and cook for a couple of minutes, then add the chickpeas, the Brazilian chilli & coconut Cook Sauce, chopped tomatoes, sugar and water. Stir and cover, cook on low heat for 15 min. stirring occasionally.
  3. While the stew is cooking, prepare the salad by mixing the avocado with the herbs, lemon juice, oil, salt and pepper to taste.
  4. We accompanied this stew with cous cous but you can also have it with rice or on its own.
