


Brazilian Aubergine & Chickpea Stew
Holy Smokes! Aubergine just got way more exciting! Using my recipe for Aubergine Stew you can create a delicious dish bursting with Brazilian flavours!
- Heat the oil in a large frying pan on medium heat. Add the onions and cook for a couple of minutes, then add the garlic and cook for another minute, until fragrant.
- Continue by adding the aubergine to the pan and cook for a couple of minutes, then add the chickpeas, the Capsicana Chilli & Tomato Cooking Paste, chopped tomatoes, sugar and water. Stir and cover, cook on low heat for 15 min. stirring occasionally.
- While the stew is cooking, prepare the salad by mixing the avocado with the herbs, lemon juice, oil, salt and pepper to taste.
- We accompanied this stew with cous cous but you can also have it with rice or on its own.
