Chickpea & Cauliflower Tinga Tacos

A fab veggie option! These chickpea and cauliflower Tinga Tacos are so tasty! Make them using my Tomato & Chipotle Tinga Cooking Paste. A delicious sweet and smoky combination. Enjoy!

Capsicana - Tomato & Chipotle Tinga Cooking Paste
  • 1 large head of cauliflower
  • 300g cooked chickpeas (a can)
  • 12 taco shells
  • 1 tbsp olive oil
  • fresh cilantro
  • 1 lime

  1.  Heat 1 tbsp of oil in a non stick pan or pot over medium heat.
  2. Add cauliflower florets and cook for 2-3 minutes.
  3. Add 60ml water, cover with a lid and let steam for 10 minutes. (Stir half way through)
  4. Add the cooked chickpeas.
  5. Add the Capsicana Tomato & Chipotle Tinga Cooking Paste and stir through adding 1-3 tbsp of water to achieve the desired consistency.
  6. Serve in warm tacos with fresh cilantro and a wedge of lime.
