Cuban Trout, Avocado and Mango Salad
Did you know that my Cuban Chilli and Lime Cook Sauce is based on the famous Cuban Mojo Sauce? In this recipe we combine with Trout, Avocado and Mango to create the an amazing flavoursome salad!
- Pre-heat the oven to 200°C / Gas Mark 5. Marinade the trout fillets with the Chilli & Lime Cook Sauce.
- In a medium size bowl, add the onions, red peppers, mango and avocado. Then add half of the juice of the lime and olive oil. Season with salt and pepper. Mix well.
- Heat a non-stick, oven proof griddle pan on high heat, once its hot, place your trout fillets and cook for 2 minutes on each side, then place in the oven for 8-10 mins, the cooking time of the trout will depend on the thickness of your fillet.
- Place cooked fish on plate with salad.
