Mexican Mushroom Fajitas

My Mexican Chilli and Honey Cooking Paste is a real favourite at Capsicana HQ. You can use this recipe to create amazing mushroom fajitas in under 15 minutes!

Capsicana - Mexican Mushroom Fajitas
  • 275g large portobello mushrooms, sliced
  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • tortillas
  • Guacamole, salsa, sour cream & cream cheese to serve

  1. Fry 1 tbsp oil in a pan, then add the sliced portobello mushrooms and cook for 2-3 minutes.
  2. Add the onion and pepper and fry for 4-5 minutes on medium heat until cooked through.
  3. Add the Capsicana Chilli & Honey Cooking Paste and allow to simmer for 2 minutes – you can add 1-3 tbsp of water to reach the desired consistency .
  4. Serve immediately with warmed tortillas.
