Mexican Style Quinoa
Holy Smokes, I love this! Create a super tasty Mexican Style Quinoa in just twenty minutes using my Mexican Smoked Cumin and Chpotle Seasoning Mix.
- Place the quinoa and the vegetable stock into a pan, along with the seasoning mix and bring to boil. Turn down to a low heat and simmer for 10-15 minutes. Then drain and rinse and set aside. Add the drained and washed black beans to the quinoa.
- Mix the avocado, quinoa and black beans together in a mixing bowl / salad bowl
- Make up the ‘Pico de Gallo’ by mixing all the ingredients together.
- Pour the ‘Pico de Gallo’ over the salad and mix in well
