Mexican Style Quinoa

Holy Smokes, I love this! Create a super tasty Mexican Style Quinoa in just twenty minutes using my Mexican Smoked Cumin and Chpotle Seasoning Mix.

Capsicana - Mexican Cumin & Chipotle Latin America Seasoning
  • 1 x ripe avocado, sliced into 1 cm chunks
  • 128g of Quinoa
  • 1 litre Vegetable stock
  • 1 can of black beans, drained and rinsed
  • The Pico de Gallo (fresh salsa)
  • 1 tbsp. Olive Oil
  • 1 small Red Onion, diced
  • 1 Clove Garlic
  • 2-3 Fresh Tomatoes, diced
  • Juice of 1 Lime
  • Chopped Coriander (optional)

  1. Place the quinoa and the vegetable stock into a pan, along with the seasoning mix and bring to boil. Turn down to a low heat and simmer for 10-15 minutes. Then drain and rinse and set aside. Add the drained and washed black beans to the quinoa.
  2. Mix the avocado, quinoa and black beans together in a mixing bowl / salad bowl
  3. Make up the ‘Pico de Gallo’ by mixing all the ingredients together.
  4. Pour the ‘Pico de Gallo’ over the salad and mix in well
