Mexican Tomatillo Chicken Fajitas

Tomatillos were first cultivated by the Aztecs and Mayans throughout Central America. In this recipe we use my Tangy Tomatillo Cook Sauce to bring a delicious tangy flavour to your Chicken Fajitas!

Capsicana - Tangy Tomatillo Latin American Cook Sauce
  • 300g Chicken
  • 1 Onion
  • 1 Green or Red Pepper
  • 1 Tbsp Olive Oil

  1. Heat the onion and pepper with 1tbsp of oil for 4-5 minutes on medium heat until cooked through.
  2. Add the Chicken and cook until they are cooked through.
  3. Add the Tomatillo Cook Sauce and allow to simmer for 2 minutes.
  4. Serve on a tortilla and add your dressings.
