Air Fryer Corn Ribs

Ingredients

4 ears of corn

Capsicana Mexican Chipotle Fajita Seasoning Mix

3 Tbsp oil

3 Tbsp mayonnaise (optional for serving)

Hard cheese, grated (optional for serving)

Method

1.      Preheat your air fryer to 180 degrees.

2.      Using a sharp knife prep the corn ribs by slicing each ear of corn lengthways into long quarter strips.

3.      In a small bowl mix half the seasoning mix with 3 tbsp olive oil to create a marinade.

4.      Generously brush the corn with the marinade until evenly coated, keeping a little back to baste it again later.

5.      Lay the corn in the basket of your air fryer, ensuring the ribs are nicely spaced out. Depending on the size of your air fryer, you may want to do this in two batches.

6.      Cook in the air fryer at 180 for 10-12 minutes, shaking halfway through. When they’re ready they’ll be equal amounts juicy and crispy, and nicely golden.

7.      While the corn ribs cook, whip up a quick chipotle mayo using the remaining seasoning mix and 3 tbsp mayonnaise. Mix well and set aside for dipping into.

8.      When the corn ribs are ready baste lightly with the remaining marinade before serving. We love to make ours extra special with a little grated parmesan or sprinkling of fresh herbs, ready to dip into the chipotle mayo.
