Ingredients

Capsicana Brazilian Cooking Paste

200g thickly sliced white fish (cod, halibut, sea bass), in large chunks

1 pepper, sliced

1 onion, sliced

400ml can of coconut milk

Fresh coriander, chopped

Fresh lime, quartered

Method

  1. Pat the fish dry and season lightly with a sprinkle of salt.
  2. In a large, deep pan fry the pepper and onion over medium heat until softened (approx. 5 mins).
  3. Once softened add in the cooking paste and mix into the vegetables. Cook for 1-2 minutes until fragrant, stirring reguarly.
  4. Add in the coconut milk, mix well and lower the heat.
  5. Once the coconut milk is simmering gently add the fish to the mixture and allow to cook for 5-6 mins as the mixture thickens.
  6. Serve with your choice of crusty bread or rice, topped with generous helpings of fresh herbs and a good squeeze of lime.
