Ingredients

Capsicana Mexican Fajita Seasoning Mix

6 chicken thighs (skin on)

2 peppers, sliced

2 red onions, sliced

100g chorizo, chopped

2 spring onions, chopped

Fresh coriander, chopped

Cooking oil

Method

  1. Preheat the oven to 180C
  2. Coat the chicken thighs with half the seasoning mix, then brown skin down in a large oven proof pan over a medium-high heat.
  3. Once the chicken is browned, turn each thigh and add the peppers, onions and chorizo to the pan.
  4. Sprinkle over the rest of the seasoning mix, along with a glug of cooking oil and remove from the heat.
  5. Move the pan into the preheated oven and cook for approximately 20 minutes (giving it a stir halfway!), until the chicken is fully cooked through.
  6. Remove from the oven and top with the chopped spring onions and fresh herbs.
  7. Serve with rice, tortilla wraps or simply as it is!
