Ingredients

Capsicana Mexican Chipotle Fajita Seasoning Mix

Capsicana Mini Tortilla Wraps

500g chicken breast

1 tbsp cooking oil

1 lime, quartered

Optional toppings:

3 radishes, finely sliced

Red onion, finely sliced

Lettuce, chopped

Method

  1. Preheat the oven to 180C.
  2. Add 1 tbsp of cooking oil to a baking dish, followed by a sachet of Capsicana Mexican Chipotle Fajita Seasoning Mix. Using a spoon, combine the oil and seasoning mix together to form a dry paste.
  3. Add the chicken to the dish and turn until fully coated in the seasoning.
  4. Cook in the preheated oven for 25-30 minutes until the chicken is thoroughly cooked through.
  5. Remove from the oven and shred the chicken using two forks. Once shredded mix the chicken well in the dish to pick up as much flavour as possible.
  6. Heat your Capsicana Mini Tortillas either by dry frying in a pan, or in the microwave for 20 seconds.
  7. Serve the pulled chicken in the warm tortillas with a squeeze of fresh lime juice and all your favourite toppings. We love sliced radish, red onion and fresh herbs!
