Tequila Beef Tacos

Ingredients

Beef brisket (approx. 1kg)

Capsicana Mexican Chilli & Honey Cooking Paste

Capsicana Mexican Guacamole Mix

2 limes

100ml tequila

1 Avocado

Onion, chopped

Fresh coriander, chopped

Method

  1. Grab a deep sided dish large enough to comfortably hold the beef. In the dish make the marinade by mixing the cooking paste with 100ml tequila and the juice of one lime. Add the beef and allow to sit in the marinade for 4 hours (or overnight if you have time!).
  2. Preheat the oven to 160C and wrap the beef tightly in foil. Place the foil wrapped beef in a baking dish and cook in the oven for 4 hours until tender and falling apart. Leave to rest in the foil for 10 mins.
  3. While the beef rests, make a guacamole by combining 1 avocado with the guacamole mix. This is your fresh guac!
  4. Slice or pull apart the beef, then serve in tacos topped with the chopped onions, guacamole and fresh coriander
  5. Enjoy!
